It’s 6pm. You’ve got a main dish going and absolutely zero interest in spending another hour on sides. Good news: you don’t have to. The best weeknight side dishes are the ones that come together so quickly you barely have to think about them — and still taste like you planned everything in advance.
Here are my go-to 15-minute sides that work with almost any main dish, require minimal prep, and taste genuinely good.
Garlic Butter Rice
White rice takes about 15 minutes on the stovetop, and while it cooks you just need to melt a knob of butter with two crushed garlic cloves. When the rice is done, toss it through. Season with salt and a squeeze of lemon. It goes with everything from grilled chicken to fish to steak, and it makes the whole kitchen smell incredible. Sautéed Green Beans with Almonds
Get a wide pan screaming hot, add oil, then toss in fresh or frozen green beans. Let them sit undisturbed for 2 minutes to blister slightly, then toss with salt, pepper, and a handful of toasted slivered almonds. Done in under 10 minutes, and it looks like you put in real effort.
Quick Roasted Broccoli
Cut broccoli into small florets, toss with olive oil, salt, and chili flakes, then roast at 220°C (425°F) for 12–15 minutes until the edges are crispy and slightly charred. Finish with a squeeze of lemon. Crispy roasted broccoli is one of those sides that disappears off the plate — even people who claim not to like broccoli will eat this.
Pan-Fried Zucchini
Slice zucchini into rounds, season with salt and let sit for 5 minutes (this draws out moisture). Pat dry and fry in a hot pan with olive oil until golden on both sides — about 3 minutes per side. Finish with fresh herbs and a drizzle of good olive oil. Simple, fast, and pairs beautifully with any protein.
5-Minute Tomato and Cucumber Salad
Chop tomatoes and cucumber, toss with a drizzle of olive oil, red wine vinegar, salt, and fresh herbs — basil or mint both work beautifully. This is the ultimate no-cook side that adds brightness and freshness to any heavy main dish. Make it while your main is resting and it’s on the table in under 5 minutes.
Instant Coleslaw
Grab a bag of pre-shredded cabbage mix. Whisk together mayo, apple cider vinegar, a pinch of sugar, salt and pepper. Toss and done. It keeps in the fridge for days and makes an excellent companion to anything grilled, fried, or smoked. Especially good alongside kielbasa or pulled pork.
Garlic Bread (the Real Kind)
Split a baguette, mix softened butter with minced garlic and chopped parsley, spread generously, wrap in foil and bake at 200°C for 10 minutes, then unwrap for 2–3 more to crisp the top. It’s the side dish that makes everything else on the table feel intentional — and it takes almost zero skill.
Keep these seven sides in your back pocket and you’ll never be stuck scrambling for what to serve again. Fast doesn’t have to mean boring.
