A 750ml bottle pours five glasses. For a dinner party, assume half a bottle per person across the evening; for a long grazing party with a board, budget a full bottle per person across 3-4 hours. Always have one bottle more than the math says — someone brings a plus-one, or the Merlot gets finished before the food lands.

Serving temperature matters more than most hosts think: whites at fridge-cold (under 45°F) taste like nothing, and reds at room temp (75°F+) taste like alcohol. Take whites out of the fridge 20 minutes before serving; put reds in for 20 minutes before opening. That single habit fixes more "this wine is off" moments than any bottle upgrade.
